Applejack: To be honest, I didn't really care about the "why" or "how."
I like that line. Vanilla evil on the rocks. Because some sessions the GM just can't think of a complex flawed backstory for the villain and just wants to put down the token for the party to defeat and get their exp.
We've seen the Pie family soup... If most of the family wasn't so "American Gothic" I could see a vanilla flavored liquor served over chilled marble chips...
But "Vanilla Evil on the rocks" does have meaning...
Vanilla Evil - Generic no frills bad guy, nothing really special going on with them directly.
On the rocks - There is something dangerous or treacherous going on in the background which ratchets up the 'danger' or 'intrigue' level. Basically, whatever is on the line, is in greater peril which doesn't necessarily have anything to due with the Villain directly, it's just adding to the mix.
Straight or Neat would be a Villian with no external complications.
So let's do this, let's compile the Villain Drink Listing, a listing of drinks that correspond to different villain types, situations, and such, that inherently come packaged with tropes, to make quick identification and labeling easier...
Vanilla Evil: Generic no frills BBEG, nothing special to set them out from the Evil crowd.
Chocolate Evil: A dark villain, but with a rich sweet complexity, this villain puts it all out there immediately. Generally considered to be a crowd pleaser.
Dark Chocolate Evil: Rich, dark villain, but with a subtle bitterness. This villain has a complexity that sneaks up on you. Not for everyone, but those that enjoy this type of villain, really enjoy this villain type.
White Chocolate Evil: Often mistaken for Vanilla Evil, but is actually rather different. Some consider it to be "bland but sweet", others consider it to be "subtle and suave". It masks it's hidden depths with a boring appearance.
French Vanilla Evil: Like regular Vanilla Evil, nothing much going on, but the villain has a dramatic backstory for no apparent reason.
German Chocolate Evil: This villain has it out there, but unlike regular Chocolate Evil, this villain has a bleak, nihilism undercutting it's actions or backstory. Avoid the German Dark Chocolate Villian at all cost, the bleak bitterness is soul destroying!
Complications:

Neat/Straight: Nothing extra is added, all the problems arise directly from the villain.
No Chaser/With Chaser: Refers to the villains Second. no Chaser means either there is no Second in command, or if so, the Second can be relied on to not bother anyone if the Villain falls. With Chaser means the second will come out for revenge!
[Type] Bomb: Frex, Jäger Bomb. This villain comes packaged with an additional surprise, usually an additional villain or possibly a "and this isn't even my final form!"
A Jäger Bomb is a hunting form or extra strength during hunts, or a Huntsmen that will relentlessly drive the villain's enemies into the villain's waiting traps.
Backdraft: The process the villain is using to take over has immediate, ongoing, and extreme effects, requiring immediate response. No taking a breather while the villain literally burns every inch of ground they take.
